30 years ago, txakoli was considered to be a low quality, acidic drink. Nevertheless, it is now a sophisticated white wine with irresistible freshness earning its place at some of the most demanding tables in the world. The reasons behind this revolution lie in the production and quality work carried out jointly by the grape pickers and the Local Administration that recognised txakoli from Getaria as a Denomination of Origin product in 1989. In 2007, this label was extended to the entire province of Gipuzkoa. Nowadays, it is a fruity wine, with a balanced palate, clean and very expressive fragrances, ideal to drink with starters such as seasoned anchovies or tuna in oil. The Getaria D.O. Txakoli route is best covered by car as it stretches over 400 hectares of vineyards and wineries in Zarautz, Getaria and Aia that produce this wine. It is a delicious route due to the beautiful coastal landscape and also the anticipated pleasure of the txakoli that you will taste when you switch off your engine. It is served an inch above the glass, breaking it and releasing its fragrances.
